Quick and easy Tater-Tot casserole - with variations! Preheat oven according to Tater-Tot directions (probably 400°)
1 lb. ground beef pkt taco seasoning 1 (12 oz.) can Rotelle or 1 cup salsa 1 can corn 1 can of Campbell's Cheddar Cheese soup
Brown gound beef with taco seasoning, add salsa or Rotelle. Layer seasoned beef in glass baking dish, followed by corn and cheese soup. Top with tater tots. Bake according to directions for tater tots until they are golden brown.
Alternate 1: Replace corn or add a with a can of chili or chili beans.
Alternate 2: Instead of salsa and taco seasoning, brown your ground beef with 1/2 t crushed or minced garlic, 1/4 C diced onion, salt & pepper to taste and use green beans instead of corn, and cream of mushroom soup instead of cheese soup.
Breakfast tots: Brown 1 lb breakfast sausage, top with country gravy packet mixed according to directions, 1 cup shredded cheddar cheese, and layer of tater tots. Bake as usual, but approximately 5 minutes before tots are done crack several eggs over the top, and replace in oven, baking until eggs are cooked to your preference. (Optional; add a layer of browned bacon slices between gravy and cheese, &/or replace gravy with salsa).
Or try Tot-Sagna: Season beef with 1 packet spaghetti seasoning, add 1/4 C minced onion, 1/2 t minced or crushed garlic, and 1/4 C chopped celery and stir in 1 C spaghetti sauce. Layer with 1 (12 oz) can diced, stewed tomatoes, a small can of mushrooms &/or sliced black olives stir 1 1/2 cups Ricotta cheese to soften, and spread over vegetables, then sprinkle with 1 cup mozzarella cheese, and top with tater tots.
